Cranberry Chicken Recipe

Sorry I didn't have this posted in time for Thanksgiving, but, trust me, it's a fantastic Christmas meal, as well. Special thanks to Cheri Burkum for giving us the recipe originally, and I dedicate this blog post to Dave and Chad. Have fun in the kitchen, guys!

NOT ACTUAL Cranberry Chicken

Cranberry Chicken

Serves: 4-6 people

Ingredients:

Instructions:

Grease bottom of 9x13 pan. Sprinkle rice in bottom. Shake up seasonings package and sprinkle 2/3 of it over rice. In saucepan, dissolve rest of seasoning packet, cranberry sauce, lemon juice, soy sauce, butter, and water. Lay chicken on top of rice and pour hot cranberry mixture on top. Seal with foil and bake 45 minutes to one hour at 325 degrees. Remove foil. Sprinkle with almonds, if you so desire. Bake 10 minutes more, uncovered. Serve and enjoy!

Great meal for a party or gathering; it's easy to make and really nice looking as well too! It's one of my Amy's favorites!
